Paleo diet allows you to eat shirataki noodles, and they are pretty fabulous when you do it right.

I used to love bok choy when I was riding solo, and it was nourishing and filling at the same time.

I have a love for noodles too, so both combined are my dream meal.

I went ahead and described the recipe below, let me know if you have any questions in the comments.

First add garlic and extra virgin olive oil to the pan, add in some minced garlic on low.

After a few minutes add a can of vegetable broth, quarter cup of coconut milk, and give it a low boil.

Add peeled shrimp either raw or cooked and cook until it’s pink. Then turn off heat, and let cool.

Turn oven to 350 degrees Fahrenheit and prep a pan with sliced bok choy, mushrooms, onions, sliced ginger, and sprinkle it with soy sauce. Add a half cup of water to the bottom.

Bake for 30 minutes or until golden brown.

Take it out of the oven and let cool.

Once cooled reheat the broth mixture.

You can either add the roasted veggies to the broth itself, or add them on top depending on the consistency you crave.
