If your grandparents were also from the old country {Italy, dur} AND Italian Pasta Salad is your absolute favorite, then you will absolutely love our Italian Pasta Salad. This stellar recipe is paleo and grain free friendly for all those on these specialty diets.

My grandfather was specifically living in Northern Italy, in a little village called Monterosso al Mare. I have no idea why he immigrated to the United States in the early 1900’s, just check out this beautiful picture of the village here. Either way here we all are in the United States and spread out on the two sides of the US in California and New York.

Most of my childhood can be described as front loading carbohydrates to prep me to back load them in the second half of my life, lol! Anything from pizza, to pasta, to eggplant parmesan, to cannolis – that stuff was eaten and eaten WITH THE QUICKNESS!

Now that I understand that the inflammation coming from my body was mainly due to dairy products, sugar, and carbohydrates, I had to start the Paleo Diet but did start with the Whole30 detox first. I didn’t realize that the reason I was feeling so groggy was because of the dairy products, sugar, and carbohydrates.

I digress. My absolute favorite thing to indulge in was Italian Pasta Salad and now I can indulge with paleo and grain free ingredients that work with my body instead of against it.

Let’s get this party started right; let’s get this party started quickly! <MUSIC VIDEO HERE>

INGREDIENTS

1 8-ounce Grain Free Fusili Pasta

1/2 cup of cherry tomatoes

1/2 cup of diced red onion

1/2 cup of green bell pepper

1/2 cup of diced cucumber

3 diced hardboiled eggs

1 cup of diced uncured Italian Salami

1 cup of Whole30 Creamy Italian Dressing

Optional, Finely Crushed Uncured Bacon

INSTRUCTIONS

Get your favorite pasta pot and filled it with hot water, salting it with a few sprinkles before placing it on high heat on the stove. Throw in 3 eggs for the hardboiled eggs and the pasta. The eggs should come out after 11 minutes. Once the pasta is aldente, strain and let cool. Set aside.

If you love bacon in your pasta salad, split open the package of bacon and bake in the oven at 375 degrees fahrenheit until crispy brown. Crush up small and set aside.

Here goes the funnest part, chopping and dicing!

Start out chopping the red onions, cherry tomatoes, green bell peppers, cucumbers, and uncured Italian Salami. Set in a big bowl. Add the pasta and crushed bacon, and place in the refrigerator for an hour before eating.

This pasta salad goes SUPER FAST, so make sure you are in it to win it. Sometimes I make this twice a week as it is a hit for my husband and kids alike.
