Not sure about you and your family, but we’ve been quite frequently visiting the Pacific Coast beaches over the last year plus pandemic time.

Here’s a good sample of our cliff hiking and seal watching for your viewing pleasure!

It was the best of times, it was the worst of times; mainly due to the fact that we went from having our kids home 13 hours a day, to 24 hours a day. Ay dios mio!

We were up for the battle, and got into some sticky situations. Our favorite times usually came together when we were baking together. So ironically, the little things became the big things.

With that, our favorite kids recipe that was also paleo friendly (double winning), was our Pirate’s Buried Treasure Muffins that were fun and creative to bake as a family.

The most adventurous part of these muffins include burying treasure in the muffins pre-oven status when they are in the tins. The possibilities of the buried treasure are endless, and we went with strawberry jelly, blueberries, diced apples, shredded coconut, chopped strawberries, cacao or chocolate morsels, chopped bananas, and chopped nuts.

We didn’t fill each muffin tin with all ingredients, but we got creative and did what we thought would be yummy in our tummy.

Here are the ingredients that were also Paleo friendly, which helps us for anti inflammatory and diet purposes.

2 cups of Paleo Pancake Mix

1/4 cup of coconut sugar

2 tablespoons of baking powder

1/2 teaspoon of finely granulated Himalayan salt

1 egg

1/4 cup of coconut oil

1 cup of almond milk

And then you can add buried treasure YOU prefer! We loved the cacao bits and chopped banana the best!

First, line your muffin tins with paper cups and preheat the oven to 400 degrees Fahrenheit.

Second, mix all ingredients together without the buried treasure. Stir well until semi smooth with minimal bumpage.

Third, stir in the buried treasure inside.

Fourth, bake the cupcakes for 20 to 25 minutes until golden brown.

Fifth, let cool and eat those delicious buried treasure muffins!
