Apple Pie Bars (Paleo) | Leverage Ambition

Nothing like warm apple pie for dessert on the weekends! These apple pie bars are super yummy, and a great treat for family and friends alike.

INGREDIENTS

For the pie filling

3 cups of apples chopped

1/2 cup of water

2 teaspoons of arrowroot starch

1 tablespoon of coconut sugar

1/2 teaspoon of cinnamon

Juice of a half of lemon

For the crust

1/4 cup of tapioca starch

2 tablespoons of maple syrup

1.5 cups of tigernut flour

2 tablespoons of coconut sugar

1/3 cup of coconut oil

1/4 cup of coconut butter

1/2 teaspoon of cinnamon

1/4 teaspoon of baking soda

For the caramel sauce

1/2 cup of coconut cream

1/4 cup of coconut sugar

1/4 teaspoon of salt

INSTRUCTIONS

For the apple pie bars, preheat oven to 350 degrees Fahrenheit and line a 9×9 baking pan with parchment paper

Combine the apple filling ingredients together in a saucepan over medium heat and simmer for 8 minutes, stirring often. Set aside.

For the crust, combine the ingredients and mix well until fully together.

Stir in the wet ingredients and stir until the dough is fully combined.

Using the baking sheet, flatten the crust onto the bottom of the pain and make sure it is thin and evenly spread out. Save about 3 tablespoons of the crust dough for the topping.

Prebake the crust for 8 minutes and let fully cool.

Layer the apple filling and evenly distribute.

Put the rest of the crumble crust on the top.

Insert the baking pan into the oven for 30 minutes. Once it is golden brown it is ready to go.

Remove from the oven and let cool 10 minutes before removing them from the pan. Slice into 9 bars and top with the caramel sauce.

For the caramel sauce, combine all of the ingredients into a saucepan on medium heat for 10 minutes, stirring often and simmering it. Distribute on top for the final touch.
