I had the most velvety butterscotch candy that was silky and smooth with legs for days. This was my first butterscotch candy this fall and I am excited to enjoy more as the days roll out. Butterscotch candy was a real hit with my Scottish grandmother, Peggy. She loved to store butterscotch candies in the middle of her car console and also stored them behind the backs of her seats for a quick pick me up, sugar splash at any time of day. Really the butterscotch candies were just in case of emergency but also a delightful way to enjoy that car ride.

Brownies are a hit year round, but sometimes I get bored of the traditional brownies and crave a blondie, also known as a butterscotch brownie. Fall is the time to indulge, and as the weather gets colder my body craves the rich feeling of buttery goodness that makes these butterscotch brownies.

Here is the my paleo, grain-free recipe for butterscotch brownies.

Ingredients for Butterscotch Brownies:

1 cup (2 sticks) organic, grass fed ghee or clarified butter, softened

¾ cup coconut sugar

¾ cup maple sugar, paleo friendly

1 tsp. vanilla

2 large organic eggs

2 ¼ cups almond flour, paleo friendly

1 tsp. baking soda

2 cups cacao chocolate chips, paleo friendly

1 tsp. Himalayan salt

Instructions for Butterscotch Brownies:

Preheat the oven to 325 degrees Fahrenheit.

Mix all the dry ingredients together well first in a big bowl.

Add eggs one by one.

Make sure they are well incorporated.

Pour in vanilla and clarified butter.

I like to melt the clarified butter ahead of time in a microwaveable bowl so that it takes a liquidy format, making it easy to incorporate in the dry ingredients.

If desired, mix in cacao chocolate chips that are paleo friendly. You can even mix in walnuts or pecans too if you love nuts!
