I love ravioli! Growing up with an Italian mom, we always had some solid ravioli with red sauce. We also had a ton of local Italian grocers nearby that would always stock up on handmade pasta. The fillings had everything from lobster to spinach and they would be delicious.

Being on the paleo diet is a sacrifice especially for pasta lovers. But fear not, we have a mushroom ravioli recipe that will bring you back to your roots.

INGREDIENTS

For the dough

3 whole cassava, boiled

1 cup of cassava flour

3 tablespoons of olive oil

2 tablespoons of nutritional yeast

2 teaspoon of sea salt

For the filling

3 cups of mushrooms

1 onion chopped

2 tablespoons of olive oil

6 cloves of garlic

1 tablespoon of lemon juice

3 tablespoons of coconut cream

2 tablespoons of nutritional yeast

1 teaspoon of sea salt

Fresh parsley

For the gravy

1 tablespoon of olive oil

2 tablespoons of cassava flour

1 cup of chicken stock

2 tablespoons of coconut cream

1 teaspoon of sea salt

INSTRUCTIONS

Throw the mushrooms, garlic and onion in a food processor until combined then toss into a hot pan and cook for 10 minutes.

Add lemon juice, salt and yeast, and cook for another 10 minutes.

Coconut cream and parsley should be added and the heat should be turned off.

For the dough, combine all dry ingredients and then make little balls will hot water. Make sure the dough is fully kneaded and combined well.

Roll out balls to 2mm thickness and spoon almost 2 teaspoons of filling into each. Cover with another top and using a fork, blend and seal the sides.

Cook in boiling water for 3 minutes.

For the sauce, heat oil and flour and mix until thick. Turn off once it is a little brown and add sea salt and coconut cream.

Pour it over the top of the ravioli’s and wallah, mushroom ravioli that is delicious and paleo friendly!
