Healthy Oatmeal Apple Pie Power Cookies | Leverage Ambition

This is a super easy recipe for chewy and delicious oatmeal apple pie cookies! This delectable fruit and spiced cookies have no refined flour or sugar, making it a healthy option for a quick snack or breakfast.

INGREDIENTS

1 cup of quick cooking oats

1 cup of whole wheat flour

1 teaspoon of baking podwer

1/2 teaspoon of nutmeg

1 teaspoon of cinnamon

1/4 teaspoon of salt

1 and 1/2 unsalted butter or coconut oil

1 large egg white

1 teaspoon of vanilla extract

1/4 cup of maple syrup

5 tablespoons of coconut milk or almond milk

1 cup of small diced apples

INSTRUCTIONS

Mix the oats, flour, cinnamon, nutmeg, salt and baking powder well together in one bowl.

Grab another bowl and whisk the butter or coconut oil, egg white and vanilla, then stir in the milk and maple syrup.

Slowly add in the dry mix into the wet mix and combine well.

Fold in the apple and cover with plastic wrap. Put in fridge for 30 minutes.

Preheat the oven to 325 degrees Fahrenheit and line a baking sheet with a parchment paper.

Drop the cookie dough in little balls on the sheet and bake for 11 minutes.
