I love the idea of mixing berries and cookies, so here we are! Paleo is a great diet to kick start your withdrawal from refined sugar and grains. These Lemon Blueberry Cookies are a true hit when it comes to your sweet cravings. They really hit the spot!

Here is our recipe for Lemon Blueberry Cookies that are Paleo friendly too.

INGREDIENTS

1/3 cup of coconut oil

1 teaspoon of gelatin

1/3 cup of coconut flour

1/4 cup of maple syrup

1 teaspoon of vanilla extract

pinch of seas salt

1/4 teaspoon of baking soda

Zest from 1 lemon

1/4 cup of dried blueberries

4 tablespoons of honey

INSTRUCTIONS

Add oil and gelatin and mix together in a bowl.

Stir in the maple syrup, and make sure it was blended well.

Add in baking soda, sea salt, lemon zest, vanilla, honey and coconut flour.

If the dough comes out too soft to form into small balls, put in the refrigerator for 20 minutes.

Put parchment paper on the baking sheet.

Mix in the dried blueberries and form into balls, smashing them into round, flat circles on the sheet.

Bake for 12 minutes at 350 degrees Fahrenheit until golden on the bottom of the cookies.

Let the cookies cool before eating as they will break apart fairly easily without it.
