My best friend grew up in the Florida Keys, on an island called Islamorada. Key West is no short of Key Limes and they use these limes in all aspects of cooking and drinking. From drinking lime based margaritas or using the lime juice on fish, key lime trees are all over the place and are transported throughout the world for everyone to enjoy.

They are obviously best when picked fresh from the trees.

Key Lime Pie is a staple of the Key West cuisine, and here is a paleo friendly recipe you will absolutely love.

Here is our recipe for Key Lime Pie bites!

INGREDIENTS

For the crust

1.5 cups of shredded coconut

12 pitted dates

2 tablespoons of melted coconut oil

For the filling

1.5 cups of coconut cream

2 reaspoons of melted cocnut oul

1/4 cup of honey

6 tablespoons of lime juice

Zest of one lime

1 tablespoon of arrowroot starch

1/4 cup of water

1 tablespoon of gelatin

For the topping

Fresh sliced lime zest

2 limes sliced for garnish

INSTRUCTIONS

For the crust

Prepare a 9×9 baking pan by lining it with parchment paper

Soak dates in water for 5 minutes to soften, then drain the water

Mix the coconut, dates and cocnut oil in a food processor.

Press the crust into the baking pan by pressing down with your hands to evenly mush it down.

For the filling

Combine the coconut oil, honey, lime zest, and lime juice with the coconut cream in a bowl and mix it well.

Stir in the arrowroot starch.

Add the water and gelatin over the top of it and let it sit on the stovetop for 2 minutes. Mix until frothy and remove from heat.

Stir the mixtures both together.

Pour over the crust and place in the refridgerator for 8 hours.

Slice into 9 bars and garish before if desired.
