Cinnamon Raisin Breakfast Lover Muffins (Paleo) | Leverage Ambition

These cinnamon raisin muffins remind me of the sweet cinnamon raisin cereal I absolutely loved as a kid.

Here is our recipe for our cinnamon raisin lover muffins that will make you fall in love!

INGREDIENTS

1 cup of raisins

1 chopped apple

3 eggs

1/3 cup of coconut milk

1/2 cup of maple syrup

2 cups of almond flour

1/2 teaspoon of baking soda

1 tablespoon of cinnamon

1 tablespoon of coconut flout

1 cup of coconut sugar

2 teaspoons of pumpkin pie spice

1/4 cup of coconut oil

INTRUCTIONS

Preheat the oven to 350 degrees Fahrenheit.

Put the muffin tins out with the little wax paper cups inside of the to prep them ahead for your cinnamon raisin batter!

Mix all of the dry ingredients in one large bowl and combine well.

Add the wet ingredients one ingredient at a time slowly so that all is incorporated well.

Once all of the ingredients are combined you should have a thick batter.

Pour the muffins 3/4 of the way up in each tin and place in the oven for 20 minutes.

You should be able to put a toothpick in the muffin and it should come out clean.
