America is in for a treat today with the best Thanksgiving stuffing in America right now. Thanksgiving stuffing is always the best part of Thanksgiving, and why not make it paleo friendly too? Now we are really double winning.

Here is our paleo friendly Thanksgiving stuffing that is super moist, and really delectable for you and your holiday guests.

I got this recipe from my mother and make it every year to eat with big fans near and far. Give it a shot and try it out before Thanksgiving to see if you like it too! It’s a great treat any day of the week really if you are up for it and in the mood.

INGREDIENTS

2 cups of diced onions

2 cups of diced bell peppers

6 cups of diced mushrooms

2 cups of diced apples

1 pound of ground pork

4 eggs

1/2 cup of chicken stock

3 tablespoons of coconut flour

8 oz fresh cranberries

1 cup of toasted choopped pecans

2 tablespoons of ghee or clarified butter

2 tablespoons of minced rosemary

2 sprigs of minced fresh thyme

3 leaves of minced fresh sage

A pinch of salt and black pepper

INSTRUCTIONS

Put a medium sized pan on low heat and add the 1 tablespoon of clarified butter, when melted add the pork with a little salt until it browns for 3-4 minutes. Pour into a large bowl and place to the side.

Add the other slice of clarified butter to the pan and add the onions, cook until soft and brown for about 10 minutes. Add to the large bowl with the pork.

Add the bell peppers and the mushrooms and saute on low heat for 5 minutes, then add to the same pork bowl.

Add the diced apples, pecans, cranberries and herbs to the bowl and add another pinch of salt to the mix.

In another medium sized bowl add the chicken sotck, beaten eggs and coconut fkour. Pour liquid in a large bowl and blend together with a wooden spook.

Add to a casserole dish and place in the oven for an hour at 325 degree or until fully cooked through.
