‘Chicken, rice, and everything nice,’ grandma used to say. My grandma was an amazing part of my childhood. I was lucky as she and my grandpa would take me to Lake George for two weeks every summer. We had so much fun reading, walking in nature, making arts and crafts, and doing all the things with me that my parents with 5 other children couldn’t make time to do. They are great parents, there was just always a lot going on in a day and more than most.

The best part of my childhood was making chicken and rice soup with my grandma. We would cut all the ingredients up together, and add each ingredient slowly and surely, doing it patiently, one step at a time.

The hardest part was letting the soup get cold for a few hours before putting it under the fire again to heat up and eat. I always wanted to eat it as it was nice and hot on the stove the first time around. But grandma always said, ‘patience grasshopper, you must wait for this chicken and rice soup to cool, so that it will be nice and flavored packed with delicious rich goodness.’

This was how the soup would sit and really get thick and flavorful as the days passed on.

I made some tasty chicken + rice soup this weekend and wanted to share some photos with you. I think you will really enjoy the recipe with your family too.

INGREDIENTS

3 tablespoons of olive oil

1 cup diced celery

1 cup diced carrots

1 cup diced white onions

1 basil leaf

1 teaspoon of black pepper

1/2 teaspoon of salt

8 cups of water

3 chicken drumsticks

1 cup of cooked rice

INSTRUCTIONS

1. Add the olive oil to a low heat pan and add diced vegetables and onions.

2. Once cooked add 8 cups of water to the pan and bring it to a boil, adding the chicken drumsticks and basil leaf. Cook for 40 minutes on low heat.

3. Take off heat and let cool for 2 hours.

4. Fire up the heat again on low and add the precooked cup of rice when ready to serve into each bowl.
