I absolutely LOVE waffles! We have a new waffle machine and it really kicks up our weekend when we make and serve delicious sticky weekend waffles that are amazingly healthy and paleo friendly!

INGREDIENTS
2 cups of cassava flour (almond or coconut flour as a substitute will also do)
1 teaspoon of salt
1 teaspoon of cream of tartar
1/2 teaspoon of baking soda
1 teaspoon of cinnamon
A pinch of nutmeg
5 teaspoons of maple syrup
1 tablespoon of vanilla
2 tablespoons of palm shortening
2 cups of water
DIRECTIONS
Preheat waffle iron to medium heat. We use the 6 setting on ours.
Stir together all ingredients but only use 1.5 cups of water. Slowly add the water until it’s a thick consistency and smooth.
Pour into the waffle iron and use a spoon as your wing man. We like our waffles thin but the thickness is entirely up to you! Cook it for 3 beeps and the lid should be pooping open as the dough rises.
Take them out and put your favorite paleo butter and maple syrup on them! We like them extra syrupy sticky in celebration of the weekend.
