Nothing says the holidays like yummy, scrumptious and sweet, mini apple pies! I can’t think of anything more satisfying as a dessert when the cold weather hits. Like Stifler from American Pie says, “Oh, it’s so fresh!”
As we get hungrier as the weather gets colder, warm mini apple pies is the way to go. You can always add sugar to this recipe if you’d like, but since I am on the paleo diet now I opted out. The toppings I use include raw honey, maple syrup, and coconut milk whipped cream, which is simply made by whipping it although it takes some time if you don’t have an electric mixer.
Who doesn’t love apple pie? Sometimes I am tempted to eat the entire apple pie, so when I make the mini apple pies it definitely helps on portion control. I like to keep my lady figure through the New Year if possible!
This mini apple pie recipe is super simple! All you need is sliced apples, orange juice, lemon juice, and cinnamon in boiling water.
For the crust, I used Birch Benders paleo friendly pancake mix, vegetable oil, and a cold egg. Chill the mixture for an hour or two in the refrigerator before using the mini apple pie dough.
I started off by slicing the apples. In this particular mini apple pie case, I used sliced gala apples and sliced granny apples in honor of my grandma that passed away this year.RIP granny, she gets the best granny award barnone.
You are free to make them wrapped up apple pies, where the mixture covers it fully. You can also leave them open faced like these I made today. It’s completely up to preference and time.
